I just adore a good home cooked curry. I love to try all the different curry's but sometimes I need just the traditional tikka masala. In the muggle world they are mostly not vegan so I created this recipe for the witches and wizards who are vegan. I served my curry up with indian basmati rice, lots of limes, coriander and small pita pockets to soak up the addictive curry sauce. All washed down with organic green tea lemonade. SO GOOD! Let me show you how to make it.
For 2 muggles:
Tikka masala:
- 1 spring onion
- 1 tbsp vegan butter
- 2 tbsp vegan curry pasta (I used the tikka masala one)
- 250 grams of vegan chicken pieces (or use tofu)
- 4 gloves of garlic
- 1 tbsp freshly grated ginger
- 1 tsp cardamom powder
- 1 tsp fennel seeds and cumin seeds
- freshly grated nutmeg (to taste)
- zest and juice of one lime
- 1 tbsp smoked paprika
- 1 tbsp agave syrup
- 1 tbsp coriander stalks
- 100 ml oat or soy cream
- 135 ml organic passata
- 1 tbsp garam masala
- 1 tbsp shredded coconut
First of all, I follow a low fodmap guide at the moment for my IBS. So if I used onions it would affect me. So feel free to use an big onion to start of the curry with if you can handle it. So after the onion had sweat of in the pan add the vegan chicken pieces. Fry off until golden brown and little bit crispy on the outside. To create more flavour. Then add the spices on at a time. Give every spice a good mix and 2 minutes at least on a low heat. To develop maximum flavour out of the spices. It takes a little bit more time but zero effort I promise it is worth it!. After you added all of the spices and your home smells like an Indian Restaurant you are on your way. Chop up the coriander stalks and add to the pan. Also add the ginger, garlic and masala curry pasta to the party. And yes this is becoming a party in the pan trust me. Set your fire to medium-high now and keep stirring. Add the zest and juice of a lime and agave syrup or other liquid sweetner you prefer. Then finally add the passata, coconut and soy cream. Put the fire on low again and cook off the curry for 30 minutes. Season to taste with salt and pepper before and after cooking and you are good to go!
Basmati rice:
- 1/2 cup basmati rice
- 2 cardamom pods
- 3 cloves
- salt
- 1 tbsp turmeric powder
- 1 cup of water
- 1 tbsp vegan butter
- 1 tbsp shredded coconut
First wash the rice until the water is not cloudy anymore. Add all the ingredients to the pan and let the rice come to a boil and then turn to low heat. No longer then 8 minutes all the rice has soaked up the water and then turn the fire off and cover the pan with a lid and let it sit of 10 minutes. Fluff up with a fork later. Add the butter and shredded coocnut and season to taste with a pinch of salt.
Garnish:
- Toasted almond flakes
- Coriander
- Coconut
- Pita pockets or naan bread
- Lots of lime wedges
Potion Tips:
- Yoko Lemonade
- Ginger Kombucha
- Mango Lassi
- Fresh coconut water
Also you can easily add more people in to the mix and make a huge pan and invite all your magical friends over to enjoy this while watching Harry Potter or FB ;)
