HERMOINE'S RHUBARB CORDIAL

This is not particular a healthy potion but a damn delicious one. It is Hermoine's rhubarb cordial. Or Love Potion! last week my mum and dad gifted me Hermoine's Film Artifact Box with all her litlle bits and pieces of her favorite items. And it is also spring! So rhubarb is in season again and I had to make this famous cordial. I infused the cordial with fresh lemon zest and juice. A hint of cardamom and the warmth of fresh ginger. This is a treat! AND It is super easy to make and so magical! Let me show you how to make it:

 

APPROX: 300 ML FLASK

 

- 4 big rhubarb stalks
- 1 tsp vanilla extract
- zest of two lemons + all of the sherbet lemon juice
- 1/2 cup of organic sugar
- 1 tbsp agave syrup
- 1 tbsp freshly grated ginger
- 3 cardamom pods
- 1/2 cup of water

 

Give your rhubarb a good wash and cut up in half moon rings. Add all the ingredients to a large saucepan and let the mixture come to a boil. Let the mix bubble away for 10 minutes. Let cool a little bit before straining the mixture. 

 

Best to drink ice cold with cubes and top of with sparkling water or just flat water. If you want to have a real treat top it off with gin, tonic, rose or lavender lemonade. It is addictive!

Tip: Use the left over pulp to stir in your yoghurt-granola bowl in the morning. ZERO WASTE!
