Spring time is still not coming true so that's why I made this wonderful soup to keep you warm and satisfied. If you are fighting against a cold or flu even better to make this soup! This is soup is packed with protein from the lentils, comforting because of the fresh ginger and turmeric and yet oh so creamy because of the oat cream. Enough chit chat, let me show you how to make this wonderful soup.


For the soup you will need:


- 1 yellow bell pepper
- 2 spring onions
- 6 cloves of garlic (use less if you want to but I love garlic in these kinda soups)
- 1 thumb size piece of ginger
- 1 cup of yellow lentils
- spices: 1 tsp each: cumin seeds, smoked paprika, fennel seeds, fenugreek seeds, pepper, turmeric powder, cardamon powder
- 3 bay leaves
- 1/3 cup of oat cream
- 1 fresh turmeric root
- 2 tablespoons of chopped tomatoes
- juice of half a lemon




- fresh dill
- oat cream
- mixed nuts (almonds & hazelnuts)
- sesame seeds
- red bell pepper
- Spring onion
- toasted fennel seeds (fry in oil for 1 min)


Heat up a medium size pan with a thick base. Slice the spring onion (leave the green end for garnish) and the bell pepper in cubes. Add some oil to your pan and start to fry your veggies on a really low heat.

So the veggies can sweat of and become really sticky and glorious. Add a pinch of salt to the veggies and lightly fry for 10 minutes. Then add your spices. Including the bay leaves. If the mixture becomes to sticky. Add a splash of water or lemon to become loose again. After you introduced the spices to the veggies and they had 5 minutes to infuse add your lentils and chopped tomatoes. Fill the pan three quarters of the way full with water and stir. 


Season the soup to taste and add a little bit of lemon juice. If you want a more spicy soup you could use a little bit of fresh chili or dried flakes. After 15 min cooking on low heat, remove the bay leaves and taste your soup for seasoning. You can leave the soup chunky but I like to blend my soups until smooth most of the time. If the soup has gone too thick add some cream or water. 


Serve your soup with the best bread you can find, so you can dunk away!
