Goodday my fellow Witches and Wizards. I want to share my Ultimate vegan version of Fish and Chips.  The 'fish'' is firm tofu with nori dipped in gingerbeer batter. Served with purple sweet potatoe fries and homemade tartar sauce.

Yield: 2 wizards, witches and muggles

This recipe is:

  • A Universal favorite veganized
  • Indulgent and delish
  • Easy to make

400 grams of firm tofu (one block)
1 large nori sheet
1 lemon (zest and juice)
150 ml organic ginger beer
50 grams white flour
50 grams corn flour
salt and pepper to taste

6 small purple potatoes (I buy them at a Asian supermarket)
a shot of olive oil
salt an pepper to taste
a few sprigs of thyme (3)
1 tsp dried oregano

5 tbsp vegan mayo
zest and juice from one lemon
6 gherkins
salt and pepper to taste
a few sprigs of fresh chives & dill
1 tsp dijon mustard
1 tsp pickle juice from the gherkins
1 spring onion

magical method

  1. Preheat your oven to 220 degrees.  Take a large baking tray and slice your potatoes in fries. Put some olive oil over them along with the spices. Bake them until crispy and golden 15-20 minutes.
  2. Dry your tofu with a table cloth for excess water. Cut them in all shapes and sizes, to mimic fishy pieces.
  3. Zest your lemon in a bowl and set aside. Put the lemon juice in another bowl and add some salt, pepper and marinate the tofu in there.
  4. In the mean time make your batter. Put the ingredients in the bowl with lemon zest. Mix until combined.
  5. I do not own a deep fryer at home so I fill up a heavy bottom pan with 1 liter of sunflower oil.  On medium to low heat.
  6. Lay your tofu pieces on a board and put nori sheets on both sides. This really helps with the fishy flavour.
  7. Drag your tofu pieces one by one through the batter until it is fully coated.
  8. Drop them carefully in the oil and fry until golden brown and crispy.
  9. Make sure you have a plate with some kitchen towel over it so you can put the pieces on there. Sprinkle with salt straight away. Then you keep the pieces crispy.
  10. Serve with the sweet potatoe fries, tartare sauce and a slice of lemon.

enjoy the magic
